Electric Lunchbox #10: Rice Pudding and Flan

Happy Mother’s Day world! Hugs to all the beautiful and tireless moms out there!

My mom was always the strong, kind mom to us. She wouldn’t get mad if we broke something, saying that she did too as a child. This I try to replicate in raising my son. I know that sometimes it’s hard to not get upset since we think they’re being careless but I remind myself that while our dad scolds us, my mom understands us. There is a balance there that I believe is needed to guide kids the right way.

Anyway, since I’m positive that breakfast/brunch is covered by your family, what about making dessert in the electric lunchbox? Today I am attempting to make rice pudding in the bottom bowl and flan in the upper bowl! Ambitious, I know but I tend to jump in with both feet sometimes. 😊

And I would like to add: feel free to eat any food that makes you happy without thinking about the calories! Today is a day to celebrate us!

*Please note that the word “cup” in any of my electric lunchbox recipe refers to the little itaki cup included with the lunchbox. It holds 40ml.*

For rice pudding in big bowl:

1 cup short grain rice, rinsed

5 cups milk

1-2 tablespoons sugar (adjust to taste)

1/8 teaspoon vanilla

Dash of cinnamon

For Flan in small bowl:

1 tablespoon sugar

1 teaspoon water

1 cup condensed milk

3 cups milk (or 2 cups milk + 1 cup half and half)

1 egg

Vanilla

Rice pudding:

Rinse rice and place it in the big bowl. Add milk and place in the base.

Flan:

Place 1 tablespoon sugar and 1 teaspoon water in the small bowl. Melt over very low heat, swirling constantly until amber in color. Set aside.

In another bowl, mix condensed milk and milk. Stir well until condensed milk is incorporated. Add egg and vanilla, beat well. Strain into the small top bowl with caramel. Place on top of the big bottom bowl and cover with foil.

Place 3 cups water in the base. Steam until it shuts off, about 50 minutes.

Remove flan. Place in the refrigerator to chill.

Stir rice pudding and add sugar and vanilla. Add 1 more cup of water in base and cook pudding until the itaki shuts off, about 17 minutes. Stir and sprinkle with cinnamon, serve warm or chill to serve cold.
